Asparagus is a perennial vegetable that comes back year after year and is one of the first things you can eat fresh from the garden each spring. It is easy to plant and besides controlling weeds the maintenance is minimal. The hardest part is waiting for those first spears to be large enough to pick! Once your asparagus bed is established you can harvest through the mouth of June. After that, the plants need a chance to rejuvenate for next year’s crop.
